Happy Chinese New Year!

Happy New YearToday is the first day of the Lunar Calendar! Most of the Eastern Asian countries run on a Lunar system instead of the Solar one that we are familiar with. Instead of following the 365-day rotation around the sun, people in Asia follow the faces of the moon and determine the new month following a “full moon”.
Chinese New Year is a very festive holiday in Asia. People would spend its whole month celebrating, paying respects to the ancestors, and praying at temples. On New Year day, there would be many traditional lion dances and red envelopes (containing good luck money) being passed out to younger kids as they give blessing to their elders.
Addition to the Lunar calendar, the Asian and Pacific Islander also follow the “Chinese Zodiac.” The Chinese Zodiac consists of 12 legendary animals, one animal representing one year. This year is the Year of the Dragon. A dragon is a legendary creature. All legendary stories about Chinese dragons are from the sky, which means heaven in China.

Christmas is just around the corner…

The Importance of the Presentation of Food

Presentation and Design is one of THE MOST important factors of any business in any industry whether it is food, car, building, clothing, hair salons, landscaping, and many, many others to be mentioned.

Basic Pasta Tips

The eighties, nineties and now the new millennium have made fresh pasta a sure winner in culinary adventures. Too bad after paying so much attention to making it the best pasta, most restaurants mess it up by cooking it improperly. Everybody knows that cooking pasta is simple (we do it so well at home). Fill a large pot of water 3/4 full, put it to a boil, drop in the pasta, cook it to perfection (al dente), then put the whole in a colander. The water will run to the drain faster than the pasta into the plate. Nobody would think of using the same water over and over to cook more pasta. Pasta, when cooking releases starch in the water (you notice how cloudy it gets in the process) and repeated cooking will make the water rancid and bitter. This inevitably will alter the taste of pasta when cooked in that water. The best way to cook pasta, therefore, is in clean water every single time. The second best way is with a pasta cooker. That, although is not providing clean water to every dish will give water that is 90% clean every time. The second common mistake is to serve pasta well piled on the plate with a crown of sauce on top! From the colander pasta should go not on the plate but in a pan where a serving of the desired sauce is waiting, sizzling. Toss it, mix it well for 10 seconds and from the pan slide it on the plate. Put a leaf or stem leafs on and serve!

Panini Misconceptions

I thought by now panini would have been the item of choice for American lunch goers. It is not, and that is because the restauranteurs have misunderstood what a panini is all along (at least the majority of them). The belief that a panini is a hot sandwich is totally flawed, and since that is the interpretation of the restaurants, it has made quite an impact on the thought of the customers. It is important though that this misunderstanding is cleared once and for all, this is what panini are all about. A panini is nothing but an Italian sandwich with romance. It is served either as it is attractively displayed in the refrigerated case present in most italian delis, or it can be heated between 2 hot surfaces on a panini grill. In Italy 70%-80% of the paninis are eaten just as they are displayed and not heated. So lets dismiss once and for all the assumption that to be called panini it needs to be hot.
